This week Riley’s class is having an Easter egg hunt. One generous mother donated her home and will be hosting 30 three and four year olds. So, I volunteered to bring the beverages for all of the moms. I knew I wanted to make a fruit tea and when I walked in the grocery store the strawberries looked amazing, here is the recipe I came up with. YUM!
Ingredients:
1 pt strawberries (plus additional for garnish)
1/2 C sugar
1 C water
8 C brewed tea (chilled)
This recipe is simply mixing a simple syrup and a pitcher of iced tea together. After brewing your tea, set aside in a large pitcher in the refrigerator. Then in a saucepan, combine a pint of strawberries. 1/2 a cup of sugar, 1 cup of water and simmer for about 5 minutes. Remove strawberry mixture from the stove top and run through a mesh sieve. I pressed as much of the strawberry through the sieve as possible, (I wanted the fiber from the fruit, but not the seeds). If the seeds don't bother you, you can run the mixture through a blender instead of a sieve. Once the mixture has cooled, combine with the iced tea and serve.
If you don't need 8-10 cups of tea, you can easily 1/2 this recipe.
