Toddy Tuesday: Cocktail fit for a Countess

Last week I was hard at work on a 60th birthday party.  In the mix of it all I decided we needed a signature cocktail, so to play up our Downton Abbey theme, we chose to mix our Prosecco with peach nectar (we are in the heart of Alabama) and a lavender simple syrup (lavender is key to all our fragrant hot teas).  We called it the "Countess Jane", Jane being the guest of honor.  We also offered the same key ingredients mixed with iced tea, since it was an event planned outdoors in May, and we called that a "Lady Jane".

Lavender Simple Syrup

2 C sugar

2 C water

3 (2-3 inch) sprigs fresh lavender

Bring ingredients to a boil while stirring.  Once sugar is dissolved leave to cool, then refrigerate.  When ready to serve, strain lavender out of mixture.

2 parts Prosecco

1 part lavender simple syrup

1 part peach nectar
