Toddy Tuesday: Blueberry Mojito

Found these vintage blue mason jars along with the pinwheel straws and decided I had to come up with a fun drink to put these goods to use.  Wanting to use some of my herbs I decided to try a blueberry mojito.  I read several mojito recipes and decided on the following combination.

Ingredients: 

2 oz blueberry mint simple syrup

2 oz rum

4 oz soda

1/2 a lime (cut in two parts) 

5-6 mint leaves

Add rum, blueberry mint simple* syrup to shaker.  Muddle half the mint and i part of the lime in a glass.  Fill the glass with ice.  Mix up shaker and pour over ice in glass.  Top with soda.  Garnish glass with remaining lime and mint leaves.

 *Too make blueberry mint simple syrup, add 1/2 cup water, 1/2 cup sugar, 1/3 cup blueberries, and 3 sprigs of mint to a pan.  Simmer, stirring frequently until sugar dissolves.  If you are happy with the blueberry mint flavor you can strain the syrup, if you would like it stronger, then let the berries and mint sprigs steep in the warm mixture while it cools.  Depending on your produce the flavor may vary.
