It is that time of year, the time when I get really excited about hearts, pink, red and doilies! I love any excuse to pull out the white school glue and glitter. But as much as I love to get my craft on, I also want to make sure that I am creating something thoughtful and useful for those teachers who do such a wonderful job taking care of my kiddos. This years solution is homemade vanilla sugar!
Vanilla sugar is a sweet treat with a lot of different uses and it is so easy to make. Two ingredients and two weeks of sitting so the sugar gets infused with that glorious vanilla scent. It couldn't be more simple. You will find many different recipes out there, but I use superfine sugar in mine which is perfect for beverages. You can rim a chocolate martini glass with it, or stir it directly into your tea or coffee to turn your everyday beverage into a special treat.

INGREDIENTS
2 cups superfine sugar
1 vanilla bean
PREPARATION
Pour two cups of superfine sugar into an air tight container. vanilla bean in half and length wise as well. Then while holding the vanilla bean use the back of the knife to scrape the paste out of the inside of the bean making certain not to scrape any of the waxy shell of the bean. Add the vanilla bean paste to the sugar and stir in as best you can. Add the beans to the sugar and bury inside the sugar. Set the container aside in a cool dark place. Every couple of days open the container and stir to make certain it is not clumping or sticking (this is more likely to be a problem in the South...where I am). After two weeks, remove bean pods and your sugar should be fully perfumed.
NOTES
If you cannot wait two weeks your sugar will still have a vanilla flavor it just may not be as strong.
If you cannot find superfine sugar regular sugar will work. I chose superfine sugar because it dissolves easier into cold beverages and I prefer it for glass rimming.
